Crumpets with ricotta, honey and walnuts

Homemade crumpets laden with butter, cheese and honey are the epitome of comfort food.
For this recipe you will need 2 crumpet rings.
Ingredients
For the crumpets
- 500ml/18fl oz full-fat milk
- 14g/½oz fast-action dried yeast
- 1 tsp caster sugar
- 300g/10½oz strong white flour
- pinch salt
- ½ tsp bicarbonate of soda
- butter, for greasing
For the topping
Method
To make the crumpets, warm the milk until tepid in a saucepan.
Add the yeast and sugar and simmer until they have dissolved. Remove from the heat and leave to activate for 10 minutes until frothy.
Transfer to a large bowl and whisk in the flour, salt and bicarbonate of soda.
Cover and leave somewhere warm for 1 hour.
Heat a large frying pan over a medium–high heat.
Grease the insides of 2 crumpet rings with butter and place them in the hot frying pan to warm.
Ladle the mixture into the crumpet rings leaving a 2cm/¾in gap at the top as they will rise.
Cook over a medium heat for 6–8 minutes, or until the top bubbles.
Flip over and cook for 1–2 minutes to finish cooking. Repeat until all of the mixture is used up, you should have 8 crumpets total.
To serve, spread the crumpets with the butter, and top with the ricotta, honey and walnuts.
