The London-based, Michelin starred chef Giorgio Locatelli grew up in Northern Italy, but fell in love with the cuisine and produce of Sicily when he visited for the first time in the late nineties. He has been going back with his family ever since. Giorgio shows Jane how to cook the perfect pasta con le sarde, or pasta with sardines – a typically Sicilian dish, which showcases the distinctive flavours and chequered history of the island.
